Happy hockey season, my friends! I’m parked on the couch watching the Chicago Blackhawks first preseason hockey game. It feels like it was just yesterday that the Hawks were winning the Stanley Cup. Hockey’s off season is incredibly short. Hockey is on a whole lot in our house during the week, so I’ll try not to bore you with it a lot. But for now, go Hawks!
Fall is in full swing (see above discussion of hockey) and soup season is in full swing as well. Tonight’s soup du jour: clam chowder.
Let this be a lesson to you.
Just because you happened to overcook cream for…uhh…8 hours in the slow cooker.
Does not mean that you have ruined your clam chowder.
I had this genius idea to cook clam chowder in the slow cooker. Which would have been successful if I waited until the end to put the cream in. But nope. Put it in and let it cook away for hours. Came home to an AWESOME smelling apartment and a terribly disappointing crock pot full of curdle-y yuck. Hot cream = curdled soup. I was ready to throw it away, but the Husband insisted we taste it first. With my eyes closed (because it was disgusting looking), I took a spoonful and was BLOWN AWAY by the flavor.
Decided it was definitely worth a trip to the kitchen emergency room. A little bit of roux, some more cream later and some nice toppings, we had something than not only tasted awesome, but looked a lot better. Still not perfect. I’ll work on this one some more and then post the recipe. Even with all the problems, the Husband said this was the best soup he as ever had! And it wasn’t your typical clam chowder. I packed it full of a ton of veggies and just a little bit of cream.
Had an awesome plate of kale chips as a side. I’m not sure I’ll ever get sick of the salty, crunchy goodness of kale chips.
As you probably know, I started training to run a 10K race last week. I’ve made a page on the blog to hold all my training info. Last week, I didn’t do so hot with training because of vacation, but this week I am taking names! Ran 2 miles this morning and felt fantastic. A mighty large shift from how I was feeling earlier this week.
