There are a lot of really great green smoothie recipes out there. And because so many people are doing so many great things with the spinach smoothie, I hadn’t really planned on adding to that pile of recipes.
That is until this past weekend. When I had a Eur-freakin-eka moment. Apple pie. Green smoothie. Go.
I caught a nasty little cold bug this past week and my sure-fire cold-shortening method is to eat clean and green. One way I make sure to do that? Pack in lots of vitamins and minerals thanks to green smoothies. I’ve tried a million different formulas for green smoothies and they almost always turn out delicious. Usually I toss in some almond milk, spinach (although I’ve been known to use kale, too), some berries, a banana and call it a day. But for some reason, this past weekend, the half-gallon of apple cider in our fridge kept calling out to me.
The great thing about the apple pie part of this smoothie (which is made up of cider, apple sauce and a pinch of cinnamon) is that it completely and totally covers the taste of the spinach part of the smoothie. I know people say that all the time about green smoothies—I promise you can’t taste the 6 pounds of kale!—but more often than not, you still can. No matter how much you blend or try to cover it up with strawberries, that earthy green taste still seems to be there. But not in this one. Nope. Not a bit. It just tastes like you’re drinking a freaking apple pie. And I don’t care who you are—that, my friends, is awesome.
Thanks to a bucketload of these smoothies, a whole ton of water and a few nights of melatonin-fueled sleep, I’m feeling much, much better. An apple pie smoothie a day keeps the doctor away!
Apple Pie Spinach Smoothie
Prep Time: 5 minutes
Cook Time: None
Makes: 1 large smoothie
- 1/2 cup unsweetened vanilla almond, soy or rice milk
- 1/2 cup 100% apple cider
- 1/2 cup unsweetened applesauce
- 1 cup baby spinach
- 1/2 cup plain Greek yogurt
- 1 medium banana
- Pinch of cinnamon
- A few ice cubes
- In the carafe of a blender, combine all ingredients. Blend on high until very smooth (it takes my blender 3-4 minutes to get there). Pour into a glass and serve immediately.
