Zucchini Chicken Burgers

Ground chicken gets a bad rap for drying out on the grill. The fix is simple: zucchini. Zucchini is tasty, but it is also an incredible way to add moisture to foods. That's why it works so well in my applesauce zucchini bread!

Shredding zucchini straight into the meat of these burgers adds just enough moisture to keep every bite tender without making the patties fall apart. You'd never know it was in there-except for the fact that these burgers actually stay juicy. I'm also not mad about a little extra boost of nutrition getting added to every bite of my burger.

These burgers are super juicy, flavorful, and tasty. They come together fast, work great on the grill or in a skillet, and are one of those dinners that earns a spot in the regular rotation without you even planning for it.

Zucchini Chicken Burgers

Ground chicken is my fave for these, but ground turkey works great, too if that's what you have on hand. I wouldn't recommend making these with ground beef-even the leanest ground beef can be a bit too fatty and turn these burgers into a mushy mess.

I topped my chicken burgers with a homemade lemon-feta-dill mayo that really takes these bad boys over the top. The super easy recipe is down below in the recipe card. It takes about 90 seconds to mix up, and you'll find yourself slathering it on everything! Store-bought mayo works great, but you can also do it with my easy homemade mayo to make it even more rich and luxurious.

I always serve these burgers with either crispy baked sweet potato fries or-if I have the grill fired up-my perfect grilled potato wedges.

Ingredients

For the Zucchini Chicken Burgers:

  • 1 medium zucchini shredded finely
  • 1 small onion shredded finely
  • 1 pound ground chicken
  • 1 egg
  • 1 cup panko breadcrumbs gluten-free works great, too
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • Buns and other burger toppings onions, cheese, tomatoes, pickles, etc.

For the Lemon-Feta-Dill Mayo:

  • ½ cup mayonnaise
  • 2 tablespoons crumbled feta
  • 1 tablespoon fresh dill minced, optional
  • Juice and zest of one lemon
  • Salt and pepper to taste

Instructions

  • To prepare the burgers, preheat grill or grill pan over medium-high heat.
  • Squeeze the shredded zucchini in small handfuls to release much of the water.
  • In a large bowl, combine the zucchini, onion, ground chicken, egg, breadcrumbs, salt, and pepper using clean hands. Form the mixture into four patties.
  • Grill the patties on the preheated grill or grill pan for 6-7 minutes, then flip, and grill an additional 3-4 minutes, or until the internal temperature of the burgers reads 160°F.
  • While the burgers are cooking, mix together all the mayo ingredients.
  • Place the burgers on buns and top with mayo, plus other desired toppings. Enjoy!

Notes

  • You can make this burger gluten-free by using gluten-free Panko breadcrumbs and a gluten-free bun.
  • This burger works just as well with ground turkey.
