Thank you for not putting cream in your carbonara. I get annoyed when people insist that pasta carbonara has a cream sauce.

Hey cass finally going to make this for din tomorrow ! I’ve seen recipes that add the egg to the pasta with the heat off… Is that how you do if? I am confused how the egg cooks and there’s no risk for salmonella..? Any advice ?!:)

Yup, that’s how I do it! The hot pasta cooks the egg. Just make sure to stir very quickly to avoid scrambling the eggs.
