This barley soup is tomato-based (you add a can of diced tomatoes when cooking), vegetarian, and packed full of garlic and Italian herbs. To make Italian Barley Soup Mix in a Jar, layer these ingredients in the order listed in a wide-mouth pint canning jar:

  • 1 cup pearled barley
  • ½ cup sundried tomatoes (dehydrated, not packed in oil)
  • 1 tablespoon dried chopped onions
  • 1 tablespoon dried minced garlic
  • 2 tablespoons dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley flakes
  • 1 veggie bouillon cube

  • 1 tablespoon dried garlic powder
  • 2 tablespoons cumin

For Coconut Curry Soup Mix

  • cup orange lentils
  • cup green lentils

Instructions

To make all jars:

  • Layer all ingredients in a clean glass jar (pint size) in the order listed. Close lid, add tag, and gift.

To make soup (general instructions, see flavor-specific instructions in notes section below):

  • Remove wrapper from bouillon cube, add it, plus all remaining ingredients, plus water into a saucepan. Bring to a boil over high heat, reduce heat to low, and simmer until the soup is cooked. Remove and discard the chile pepper and bay leaves, if used, before serving. Season to taste.

Frequently Asked Questions about SOUP MIXES

Each recipe is slightly different, but on average they make about 4 servings of soup per jar.

Sure can! Just double all the ingredients to make a quart-sized jar, which will equal about 8 servings of soup.

Chicken bouillon cubes will work just fine in place of the veggie bullion.

We keep them wrapped because it helps seal in the flavor for longer storage, but you can also unwrap them-dealer's choice!

Sure can! Just use the equivalent amount to one cube in powdered bouillon (typically it's one teaspoon = one cube).

Nope! We use a long boil method in the soup instructions so no need to soak the beans beforehand.

The age of the beans can dramatically affect the amount of water and the amount of cooking time beans need. Older beans = longer to cook (and you don't always know how old the beans in the store are). Best bet is to keep an eye on the soup, add more water if necessary, and taste test until the beans are softened.

Since all ingredients in the jars are shelf-stable, you should be able to get by with at least six months in pantry storage for each jar or up a year. For jars with beans, we recommend making them in the first few months so the beans cook quickly. Older beans take longer to cook.

Raw kidney beans have a toxin that can cause digestive upset in some folks. It is killed off after 10 minutes of boiling, which is included in the instructions for the soup. No pre-boiling needed!

We have not tested these recipes in the Instant Pot or Crock-Pot, but some folks in the comments have. Check there for suggestions!

  1. These soups look delicious and I plan on making several of them for gifts. Just so you know , the billions that people spend on Christmas gifts are incredibly important to the holiday. Do you understand how many companies depend on the Christmas season to bread even for the year? Not just your big box stores, small businesses especially. Without those dollars coming in many businesses would fold, supply chains hurt, etc., etc. etc. While i think it is really nice to help people in need, don't forget that those around you need your support too.

    1. Barley and egg noodles contain gluten, so the Italian Barley and Chicken Noodle are not gluten-free. The others should be, as long as you use a gluten-free bouillon.

    1. I actually usually dry my own, but I've also gotten them dried in bags in the produce section of my local supermarket.

    1. I used a dried chili pepper (a whole one), but you could also use powder if you wanted—I'd go with 1/2 teaspoon of cayenne pepper.

    I made the Coconut Curry Soup (link below) from Wholefully(dot)com tonight... so delicious! I added some red pepper flakes because I didn't have a chili pepper and it worked wonderfully. I will be making more jars of this for our pantry this fall. HUsband has already requested that I make this again. It served the 4 of us (2 adults, 2 young kids) just fine but would probably not serve 4 adults to full. We also added a french loaf with Jake's famous oil/vinegar/garlic dip.

    1. Help! Question for you - all of the grocery stores I have been to only have sundried tomatoes that require refrigeration after opening or are packed in oil. Is there something I can sub for the sundried tomatoes? Tomato paste? More diced tomatoes? Thanks!

    1. My bullion cubes were big ones (making 2 cups of broth each), if you have a normal cube that makes 1 cup broth, use two. 🙂

  10. GREAT IDEAS!!! What kind of veggie bouillon are you using? I have The Organic Gourmet Bouillon Cubes Vegetable Flavor where a serving is half a cube = 5.5 grams = makes 1 cup prepared broth. When you say one cube, do you mean a full 11 gram cube = 2 cups prepared broth? Thanks for clarifying for me before I make these!! 🙂

    1. Nope, you don't have to. You can just cook them longer. If you prefer, you can mix up the spices separately and include them in a spice packed (either in a ziptop baggie or folded parchment paper), and then instruct folks to soak the beans first.

    Don't the beans need to be washed before eating? How does this work when the spices are in already? Dying to try these!

    1. From Cassie: "I pretty much never wash my beans before cooking—a little dirt never hurt! You'll be boiling the soups to a high enough level to remove any bad germs, and because beans are grown in a pod, they don't get very dirty/dusty/soil-y. But if it bugs you, just put the spices and boullion into a separate baggy and recommend to your giftees that they rinse the beans first."
