When you think of slow cooker dinners, you might not immediately think “vegetarian.” After all, the slow cooker is known for the magic it does to turn almost any run-of-the-mill cut of meat into tender, fall-apart deliciousness.
But fear not herbivores! You too can rock the crock pot. The slow cooker is just as amazing for meatless meals! In fact, I’d say that some of the vegetarian slow cooker recipes are oftentimes more inventive and fun than just tossing a pork roast in to cook.
