I was always confused growing up as to why my parents didn’t take more vacations. We went on family vacations every year (mostly road trips to exotic locales like…St. Louis), but as far as full-on, sit under a palm tree while someone serves you drinks with little pink umbrellas? Not so much. Part of it was money, we weren’t poor, but my parents were (and continue to be) very frugal and discerning with where they spent their money.
The other part of why we didn’t spend more time on the beach, what I’m starting to realize now, is that they didn’t need a vacation like a lot of people do. Their home was enough of a sanctuary to not need to jet set off to a remote island somewhere. They came home from work everyday to their own little vacation home in the country.
I suppose people living in more urban areas do really need a break from civilization, but my everyday is a wonderful, isolated break from the world. Literally, the other day, we heard an ambulance on our country road for the first time in probably a year. And we stopped what we were doing and sent some good vibes into the universe for our neighbors. Sirens were so frequent when we lived in the city, it soon just became background noise—it rarely even occurred to me that there was someone on the other end of that ambulance ride. How sad.
Our house is nestled in the woods and we could go weeks (and have gone weeks) without seeing another human. When I walk outside in the morning, I hear birds chirping, the sound of the waterfall on our fish pond, and nothing else. Who needs to spend $5,000 on a vacation when you have a prime vacation spot right in your own backyard? Now I get why we didn’t take more vacations when I was a kid. For some folks, vacations are a necessity, for us, it was just a luxury that wasn’t very high on our family priority list.
Back when I was living in the city, we did do our fair share of vacationing (of the beach variety, mostly), and there are a few things I miss about vacation life. I miss the unwritten rule that you are allowed to buy and wear fun vacation clothes that you’d probably never buy or wear in the “real world.” I miss hitting up all the cheesy souvenir shops. That’s one of my favorite vacation pastimes! And I miss vacation eating.
Really, is there anything better in the world that the totally guiltless freedom of vacation eating? Have that extra slice of key lime pie. Have another piña colada. Lobster and steak? Sure! Vacation calories aren’t the same as real world calories. As much as I like to pretend our homestead is a little slice of vacation land, vacation eating is something I leave to the actual resorts. Decadent and rich eating like that is okay occasionally, but as everyday? Not so much. A week of it is about all I can handle before I’m jonesin’ for some water and veggies.
So, in order to keep the vacation vibe going all the time around here—and still fit into my jeans—I try to take some of our vacation favorite flavors and make them into lighter, healthier, everyday treats. Like these rum-less piña colada popsicles. Full of island flavor, but light and healthy enough to eat everyday (and perfectly acceptable for the kids to enjoy, too)!
If you’ve ever tried to make creamy popsicles at home before, you might have ended up with icy, separated popsicles that were still delicious, but not quite the right texture. It can be really hard to mimic the creamy texture of store-bought popsicles, because many of them use thickeners and additives. But I have a secret weapon. And it’s pretty much my secret weapon for everything in my kitchen—coconut milk!
Coconut milk is rich, thick, and creamy—and it stays that way in the freezer. Perfect for making these creamy, dreamy pina colada popsicles. I highly recommend creating your own sanctuary at home. It doesn’t have to be nine acres like ours is. It can just be a quiet room or heck, even just a chair in a corner somewhere. Put on those vacation clothes that are hiding in the back corner of your closet, turn on an ocean waves track, and enjoy your popsicle. Take five minutes to yourself and enjoy your own personal “beach”.
- 2 cups Unsweetened Almond Breeze Almondmilk Coconutmilk Original, divided
- 3 tablespoons honey, divided
- ⅓ cup unsweetened coconut
- ⅔ cup chopped pineapple (fresh or canned)
- Juice and zest of one lime
- 1 teaspoon matcha powder or 1 drop green food coloring and 1 drop yellow, optional
- In the carafe of a blender, combine 1½ cups Almond Breeze Almondmilk Coconutmilk, 2 tablespoons honey, coconut, and pineapple. Blend on high until smooth.
- Pour the mixture into popsicle molds, filling up ⅔ of the way. Place in the freezer and freeze for at least one hour, or until solid. If using free-standing popsicle sticks, place in the popsicles about 30 minutes into freezing.
- For the second layer, combine the remaining Almondmilk Coconutmilk, remaining honey, lime zest and juice , and match powder or food coloring, if using. Pour over top of the first layer. Place in popsicle sticks if you haven't already, and then freeze until solid, about three hours.
The matcha powder is an all-natural way to tint the lime layer green, feel free to use food coloring instead or leave out completely.
