Peanut Butter Rice Krispie Treats are a twist on a classic recipe that your family is sure to love! These are great treats for parties, after-school snacks, and last-minute desserts.
Line a 9"x9" baking pan with parchment paper and set aside. Measure out 1 cup of mini marshmallows and set aside.
In a large pot, melt butter over low heat. Once melted, add all but the reserved 1 cup of the mini marshmallows and stir until the marshmallows are beginning to melt.
Stir in the peanut butter, mixing continuously until peanut butter is distributed evenly throughout. Remove from heat.
Stir in the Rice Krispie cereal, remaining 1 cup of mini marshmallows, and peanut butter chips (if using) until everything is evenly coated.
Press the mixture into the baking pan gently, smoothing the top. Don’t press too hard, or they will be more difficult to eat.
Allow to cool completely for at least 1 hour, then slice and serve!
Notes
Peanut butter chips are optional but definitely recommended. You can also use chocolate chips instead!
We recommend creamy peanut butter for this recipe. We've used natural and conventional peanut butter, and both worked well!
These keep well at room temperature in an airtight container for up to 3 days. To avoid them sticking together, slice them, then stack them with parchment paper in between.
