Ingredients

  • cup unsweetened milk of choice
  • ½ cup heaping rolled oats
  • cup plain Greek yogurt
  • 1 tablespoon chia seeds or ground flax meal
  • ½ teaspoon vanilla extract
  • 2 tablespoons natural peanut butter
  • 2 tablespoons mashed banana about 1/2 banana
  • Pinch salt
  • 0-2 tablespoons honey or maple syrup

For Topping, optional:

  • 4-6 slices banana
  • 2 tablespoons natural peanut butter
  • Sprinkle of cinnamon

Instructions

  • Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a jar with a tight-fitting lid.
  • Close and refrigerate for at least 4 hours, but preferably overnight, before eating.

Notes

  • Top oats with banana slices right before serving so banana does not turn brown.
  • If you prefer, you can use crunchy peanut butter in this recipe.
