canned light coconut milk

pineapple juice
¼-½
cup
white rum
optional

banana
for added sweetness, optional
Pineapple wedges and maraschino cherries
for garnish
Instructions
Pour the coconut milk into an ice cube tray, and freeze until solid, about four hours.
In a blender, combine the coconut milk cubes, pineapple juice, white rum (as desired), and banana, if using. Blend on high until very smooth.
Pour into cocktail glasses, and garnish with pineapple and cherries.
