Wash 2 pounds potatoes and cut into bite-size pieces.
In a large bowl, toss the potatoes with 2 tablespoons avocado oil or olive oil until all the potato pieces are coated.
Spread the potatoes out on a baking sheet, and sprinkle with 1 ½ teaspoons garlic powder, 1 teaspoon salt, and ½ teaspoon freshly ground black pepper (if using). Stir to cover all the pieces with seasoning. Do not overcrowd the pan—you may need to spread this between two baking sheets.
Bake in the preheated oven for 25-30 minutes, or until the potatoes are fork tender. Sprinkle with 2 tablespoons fresh chopped parsley before serving.
