Ingredients

  • 1 ½ cups all-purpose flour or gluten-free all-purpose flour
  • ¾ cup cornmeal
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk or plant-based milk
  • ¼ cup vegetable oil
  • 1 large egg beaten, or equivalent egg replacer
  • ¼ cup honey

Instructions

  • Preheat the oven to 400°F and prepare a 9"x9" baking dish or 10” cast iron skillet with cooking spray and/or line with parchment paper. 
  • In a large bowl, whisk together the flour, cornmeal, baking powder, and salt until well mixed. 
  • Add the milk, oil, and egg. Use an electric mixer on low speed until fully incorporated. 
  • Gently fold in the honey and mix just until combined. 
  • Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until the top begins to turn golden brown. A toothpick inserted in the center should come out clean. 
  • Remove from the oven and serve warm.
