Slice the hoagie rolls and spread the mayo evenly over each hoagie.
Top with turkey, cheese, tomatoes, and lettuce evenly. Drizzle with oil and vinegar and sprinkle with black pepper if desired. Place the top buns on each of the hoagie sandwiches.
Cut each hoagie sandwich in half and arrange in two āsā curves.
Insert 2 toothpicks into the end hoagies, then skewer the pimento-stuffed olives on them to make the eyes.
Cut a slice of cheese into a snake tongue shape, then place it in the layers of the end of the sandwich with the eyes so it sticks out and looks like a tongue. Serve!

You can use sourdough, wheat, white, or gluten-free hoagies to accommodate your guests!
These sandwiches are long, so we recommend laying them out on a long piece of parchment for easy cleanup.
You can add sliced olives, banana peppers, ham, spinach, pickles, red onions, etc. to make these your own. You can also do an Italian version for one of the snakes and the turkey version for the other when serving guests.
