Blend all ingredients in a high-speed blender until smooth. Pour into champagne flutes. Garnish with mint leaves, berries, or peach slices and serve immediately.
Notes
This recipe is best served immediately and doesn’t keep in the fridge for more than a couple of hours.
You can use white wine in place of the prosecco if desired.
Peach schnapps is optional, and you can use ½ cup more prosecco in place of the peach schnapps, but the peach flavor will be slightly diminished. You may also use peach vodka in place of the peach schnapps.
