Ingredients

  • 1 pound asparagus ends trimmed
  • 1 pound yellow potatoes chopped into 1-inch pieces
  • 2 tablespoons avocado or olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh rosemary minced
  • ¾ teaspoon coarse salt
  • 2 tablespoons grated Parmesan cheese

Instructions

  • Preheat oven to 400°F and line and grease a baking sheet.
  • Trim 1 pound asparagus and chop 1 pound yellow potatoes, and place them in a large bowl.
  • Add 2 tablespoons avocado or olive oil, 2 teaspoons garlic powder, 1 teaspoon onion powder, 2 tablespoons fresh rosemary, and ¾ teaspoon coarse salt to the bowl, and toss to coat evenly. Set asparagus aside.
  • Arrange potatoes in a single layer on the prepared baking sheet, and bake in the preheated oven for 20 minutes, turning halfway through. Leave room for the asparagus on your pan.
  • After 20 minutes, place the asparagus on the baking sheet in a single layer and sprinkle with 2 tablespoons grated Parmesan cheese. Bake for another 15 minutes.
  • During the last 2-3 minutes of baking time, turn the oven up to broil to get golden potatoes. Remove from the oven and serve!
