In a small bowl, combine 1 tablespoon Italian seasoning, 1 teaspoon garlic powder, and ½ teaspoon salt. Rub the mixture all over 2 pounds boneless, skinless chicken breasts, until well coated.
Heat 2 tablespoons avocado oil in the Instant Pot on high, then add the chicken breasts. You may have to work in batches. Sear each chicken breast for 4-5 minutes on each side. Set the chicken aside.
Pour in 1 cup low-sodium chicken broth, and scrape the brown bits off the bottom of the pot.
Press “cancel,” and place the trivet inside the Instant Pot. Set the seared chicken on top of the trivet, and close the lid.
Pressure cook on high for 12 minutes, and allow for a 10-minute natural release. Once the 10 minutes is up, release the pressure from the Instant Pot, then open the lid and remove the chicken. Slice and serve!
