With an Instant Pot, sweet potatoes are ready in 15 minutes. Use your pressure cooker to make tender sweet potatoes that are perfect as a side dish or for stuffing.
Scrub the sweet potatoes under cold water, and prick each potato 3-4 times with a fork.
Place the trivet inside the Instant Pot, and then add the water. Place the sweet potatoes on the trivet, and close the lid. Make sure the valve is set to “sealing”.
Pressure cook on high for 20 minutes for 2-inch potatoes, 30 minutes for 3-4 inch potatoes, or 40 minutes for 5-6 inch potatoes.
After cook time is complete, allow for a 10-minute natural release. After 10 minutes, release the pressure by changing the valve to “venting.” Serve!
