These Iced Oatmeal Cookies are a delightful bite of nostalgia! With cinnamon, vanilla, and molasses, these soft, chewy cookies are sure to be a new favorite.
Preheat oven to 350°F. In a large mixing bowl, stir 1 ¼ cups all-purpose flour, 1 cup rolled oats, 1 teaspoon cinnamon, ½ teaspoon baking soda, and ½ teaspoon salt. Set aside.
In a separate bowl, combine the melted ½ cup butter, ½ cup brown sugar, and ½ cup granulated sugar. Add 1 large egg, 1 large egg yolk, 1 tablespoon molasses, and 1 teaspoon vanilla extract and stir until combined.
Add the dry ingredients to the wet ingredients and stir until just combined.
Scoop the dough into 1.5-inch balls and place on a parchment-lined baking sheet at least 2 inches apart. Bake for 11-12 minutes, or until edges turn golden brown.
While the cookies cool, make 1 batch sugar cookie icing. Once the cookies are cooled, dip the tops in the icing, then transfer to a cooling rack to allow the excess icing to drip off. Allow the icing to fully set for at least 3 hours.
