Place the garlic on a cutting board, and whack it firmly with the flat side of a large knife. Remove the peel and discard.
With curled fingers, hold the garlic clove and run a knife through to create very thin slices—¼” or less in thickness.
Gather up the slices and rotate 90°. Run your knife through to create another row of thin slices—¼” or less in thickness.
Pile the small pieces on the cutting board, and run the knife through a few times to mince any larger pieces. Repeat the gathering and cutting process until the pieces are even and very small.
