Slice ¼"-½" off the bottom of the pomegranate. You should be able to see the top of the red arils.
Score along the ridges that mark the section of the fruit with your paring knife, from the crown all the way down to the base. If you can't find the ridges, score along the side of the fruit 4-5 times with even spacing.
Break apart the segments of pomegranate.
Over a large bowl of water, use your fingers to remove the seeds from the pomegranate segments. The seeds will sink, while the pith will float.
Discard the floating pith and drain the arils. Enjoy!
