Toss together 1 large head red cabbage, 1-2 jalapeño peppers, 1 large carrot, and ¼ cup finely minced cilantro in a large bowl.
Whisk together 1 tablespoon kosher salt, 2 teaspoon dried oregano, ¼ cup apple cider vinegar, and 2 teaspoons maple syrup. Pour dressing over cabbage mixture, toss to coat.
Chill for at least three hours before serving, preferably overnight.
