Chunky Cranberry Applesauce is more flavorful and healthier than the typical cranberry sauce, and it really lets the flavor of the cranberries shine through.
Juice and zest of 2 clementinesabout 2 tablespoons juice and 2 teaspoons zest
1teaspoonground cinnamon
½teaspoonsea salt
Pinchground cloves
3poundsGala or Fuji applescored and chopped into small pieces
Instructions
In a large saucepan or Dutch oven, combine the cranberries, maple syrup, water, clementine juice and zest, cinnamon, salt, and cloves over medium-high heat. Simmer until the cranberries begin to soften and pop, about 5 minutes.
Reduce heat to low, and add in the apples. Continue to cook over low heat, stirring frequently to prevent sticking, until the apples are very tender, about 20 minutes. Using a potato masher or immersion blender, blend or mash the applesauce until it's the desired texture.
Transfer to a covered container, and refrigerate until fully chilled, about four hours.
