In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
In a separate mixing bowl, stir together the milk, oil, egg, maple syrup, and vanilla extract.
Stir the dry ingredients into the wet ingredients until just combined.
Fold in the chocolate chips, then allow the batter to rest while you preheat the waffle maker.
Preheat your waffle maker according to manufacturer instructions, then spray with cooking spray. Add enough batter to fill the wells of the waffle maker, then cook for 4-5 minutes, or until the waffle is golden brown.
