3large eggsbeaten
6tablespoonsunsalted buttermelted
12ouncesevaporated milk
1teaspoonvanilla extract
¼teaspoonsalt

Makes: 9inch0 x 0inch round
Instructions
Preheat oven to 350ºF. Roll out and fit the pie crust to a 9-inch pie plate. Trim and crimp the edges of the crust and set aside.
In a medium bowl, whisk together the sugar, cocoa powder, espresso powder (if using), cornstarch, eggs, melted butter, evaporated milk, vanilla extract, and salt until very smooth.
Pour the mixture into the prepared pie crust.
Bake in the preheated oven for 45-50 minutes, or until the mixture looks mostly set, but it is still slightly jiggly. The top of the pie should have formed a light brown crust.
Cool pie on a wire rack until completely cool, then refrigerate before slicing. Serve pie topped with whipped cream and chocolate shavings.
