Ingredients

  • 1 pie crust gluten-free pie crust works well, too
  • 2 cups granulated sugar
  • cup cocoa powder
  • 1 teaspoon instant espresso powder optional but recommended!
  • ¼ cups cornstarch
  • 3 large eggs beaten
  • 6 tablespoons unsalted butter melted
  • 12 ounces evaporated milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Whipped cream and chocolate shavings for serving
Makes: 9inch round

Instructions

  • Preheat oven to 350ºF. Roll out and fit the pie crust to a 9-inch pie plate. Trim and crimp the edges of the crust and set aside.
  • In a medium bowl, whisk together the sugar, cocoa powder, espresso powder (if using), cornstarch, eggs, melted butter, evaporated milk, vanilla extract, and salt until very smooth.
  • Pour the mixture into the prepared pie crust. 
  • Bake in the preheated oven for 45-50 minutes, or until the mixture looks mostly set, but it is still slightly jiggly. The top of the pie should have formed a light brown crust.
  • Cool pie on a wire rack until completely cool, then refrigerate before slicing. Serve pie topped with whipped cream and chocolate shavings.
