2cupsprepared Caesar salad dressinghomemade or bottled
4large flour tortillas
2heads romaine lettucechopped
1cupcherry tomatoeshalved
½cupshaved Parmesan cheese
½cupwhole grain croutons
Instructions
In a medium-size mixing bowl, mix the chicken and salad dressing until well combined.
Lay out a tortilla on a cutting board, then layer ¼ of the chopped lettuce, ¼ of the chicken, ¼ of the tomatoes, ¼ of the cheese, and ¼ of the croutons. Wrap the tortilla burrito-style, then serve immediately.
Notes
To make these ahead for lunches: leave out the cherry tomatoes and croutons. When layering the wrap, layer the lettuce first to create a "barrier" between the chicken and the tortilla. Once assembled, eat within a few hours—I wouldn't recommend making these more than a few hours in advance.
