This quick and easy beer cheese dip is perfect for parties or game day snacks. With just a few simple ingredients, you can have a delicious and creamy dip in just 15 minutes!
Add ¼ cup unsalted butter to a medium saucepan and heat over medium heat. Once melted, whisk in ¼ cup all-purpose flour, stirring constantly for 1 minute.
Whisk in 1 ½ cup whole milk, ¾ cup beer, 1 tablespoon Dijon mustard, 2 teaspoons Worcestershire sauce, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon smoked paprika. Bring to a boil, then reduce the heat to a simmer and cook for 2-3 minutes, until thickened.
Add about half the cheese and stir until melted. Add the remaining cheese and stir constantly until fully melted and smooth.
Serve with soft pretzels, chips, and/or veggies!
Notes
If you'd like to make this without alcohol, sparkling apple cider works great in place of beer. The cheese dip is still delicious, but it does turn out sweeter than if using beer.
We recommend a lighter beer like lagers for this recipe. We used a Mexican lager and it was great! You want to avoid dark or strong beers like IPAs, stouts, etc.
You can customize this recipe by using different cheeses like cheddar jack blends, pepperjack, etc. But we recommend using at least 50% cheddar cheese to keep it the right consistency!
This dip thickens as it cools, so it’s best to keep it warm when serving. We recommend a small crockpot or keeping it on low on the stove while guests are digging in.
