I’m fully immersed in the recipe development stage of my cookbook. Which means that there is a ton of food being pumped out of our kitchen right now. Thankfully, a lot of the recipes I have planned are freezer-friendly, but still about 1/3 of what I’m making is for fresh-eating only. And considering I’m doing 3-5 recipes a day, that’s a lot of food! So our eats for the next few weeks are going to be pretty much entirely made up of cookbook leftovers. I hope you don’t mind getting a little preview of what’s coming up. Here’s what I ate yesterday while I was cooking away…
Smoothies were on the docket for today’s cooking marathon, so I had lots of taste-testing sips, but I landed on drinking this berry smoothie for lunch. In it: raspberries, blackberries, strawberries, blueberries, almond milk, and Greek yogurt.
I took a kitchen break and spent a little time out the garden. I couldn’t resist pulling up a few of our carrots to munch on. So sweet and delicious!
I didn’t stop cooking until lateish in the afternoon, so I finally sat down for lunch/dinner (linner!) around 5ish. I had a bowl of Penne Rosa (which is being tweaked, renamed and rephotographed for the book). This is one of my favorite recipes on the blog. So. Yum.
Dessert was cake! We’re still nursing my birthday cake from last week. Have I mentioned this thing yet? Craig made me the cake to beat all cakes. The layers: brownie, marshmallow, cheesecake, chocolate chip cookie, graham cracker all held together with dark chocolate buttercream. Insane. And delicious!
