This might be the last day of homemade eats for a few weeks. I’ve made the decision to finally pack up the kitchen and just accept we’re going to nosh on take out until we move next week. I’ve been putting off packing up my beloved kitchen gadgets, but the time is now. I’m really bummed to pack away all my friends into dark, dusty cardboard boxes, but alas, it must be done. Enjoy my bottom-of-the-barrel eats. I’ll be back next WIAW with lots of food made by other people.
I had chocolate overnight oats for breakfast. These looked awesome, but they were actually kinda flavorless. My milk/yogurt ratio was off. Oh well! Better luck next time. In the mix: vanilla yogurt, unsweetened vanilla almond milk, chia seeds, oats, and cocoa powder. On top: a sprinkle of chia seeds, almonds and a few mini chocolate chips.
Ate a peanut butter and dark chocolate KIND bar for snack mid-morning. YUM! I love this one. It’s definitely my favorite KIND bar.
Had a nice little bento box for lunch. Leftover brown rice, baby carrots, snow peas, a hard-boiled egg, cheddar cheese, a tiny little peach from the farmer’s market, a few leftover potato wedges, some leftover frittata and a square of 88% dark chocolate. My favorite part of bento-ing is the variety. Little tastes of everything make lunch so much more fun!
At work, I had a banana, which was too ripe for my tastes. I like ’em a little green. And then once home, I had a single-serving bag of Pirate’s Booty for my after school snack. I love Pirate’s Booty, like whoa.
Still on a mission to clear out the pantry, and I have a lot of beans to use, so ham ‘n’ beans was a perfect use for some. It also cleared out my last ham hock in the freezer. And was made in the slow cooker so I didn’t have to put much effort into dinner. Full of moving month win! And you can’t have ham ‘n’ beans without cornbread. I had
a nice triangle two nice triangles on the side for sopping and scooping. Because really, has anyone ever in the history of the world ever eaten just one piece of cornbread?
I’m pretty obsessed with my Nutella Banana Fudgesicles. So chocolatey. So refreshing. So yummy. I added a scoop of banana protein powder to the batch this time, too. Made them a bit more creamy and added some protein.
What’s the best thing you ate yesterday?
That little tiny peach was perfectly ripe, juicy and delicious. Yay for farmer’s markets!
