After inhaling the PB+J pancake rollup, I strangely got the urge to put a clay mask on my face. Random? Yes. But totally relaxing and satisfying.
Did I mention that I do a Sunday evening Zumba class? Well I do and it was a ton of fun. Unfortunately, my legs felt like lead and I was just exhausted. It could have something to do with this morning’s gym session. Ended up burning a total of 1256 calories today. Which is a ton.
Came home from Zumba STARVING and to the welcome sight of the husband cooking us dinner. THE BEST SANDWICH EVER.
Grilled Eggplant and Tomato Sandwiches with Romano-Black Pepper Mayonnaise
1/2 cup Mayonnaise
3 tablespoons grated Romano cheese
1 teaspoon lemon juice
1/4 teaspoon coarsely ground black pepper
1 small eggplant, cut into 1/2-inch-thick slices
4 tablespoons olive oil, divided
4 plum tomatoes
8 slices Italian bread or focaccia
Fresh basil leaves
Combine Mayonnaise, cheese, lemon juice and pepper. Season, if desired, with salt; refrigerate. Brush eggplant slices on both sides with 2 tablespoons oil. Season, if desired, with salt and black pepper. Grill, turning once, 8 minutes or until slightly charred and tender. Brush tomatoes with remaining 2 tablespoons oil and season, if desired, with salt and black pepper. Grill, turning once, 4 minutes or until charred and slightly softened. Remove and slice into quarters lengthwise. Evenly spread bread with mayonnaise mixture, then top with basil, eggplant and tomatoes.
Served it on the side with some of our favorite canned (well boxed) soup. Pacific Organic Roasted Red Pepper and Tomato Soup
Seriously one of the best and easiest sandwiches I’ve ever eaten. I wanted 12 more. Go make it. Now.
