Not to be dramatic or anything, but I think I’m going to die, guys.

Actually, I know I’m going to die. And not from old age in a rocking chair next to Babyface on a beautiful veranda. Soon. From this cold. There is no way a body can produce this much snot and make it out the other side. It’s over for me. I’m headed for the big NyQuil bottle in the sky.

But before I pass through the piles of snotty Kleenex to the light at the end of the tunnel, I have to share this recipe with you.

I was able to pull this one together right before I started feeling really terrible. It came together quickly and was gooey, melty, comforting and everything I wanted to help make me feel better. Babyface took one bite of this and proclaimed it was the best breakfast I’ve ever made. The sharp cheddar was such an amazing pairing with the sweetness of the pear.

I can’t wait to try breakfast quesadillas with other fillings. I’d imagine raisins, cheddar and apples would be amazing.

Pear and Cheddar Breakfast Quesadillas

Pear and Cheddar Breakfast Quesadillas

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Sweet breakfast quesadillas - who knew? This one uses pear and cheddar, but raisin, apple, and cheddar would be great too!

Ingredients

  • 2 tablespoons honey
  • 4 ounces cream cheese, softened
  • 4 large whole grain tortillas
  • 2 ounces shredded cheddar cheese (about 1 cup)
  • 1 medium pear, cored and sliced thinly
  • 1/4 cup dried cherries or cranberries

Instructions

  1. In a small bowl, whisk together the honey and cream cheese. Spread the mixture evenly on one side of all the tortillas.
  2. In a non-stick skillet over medium heat, place one of the tortillas, cream cheese side-up. Layer 1/4 of the cheese over the cream cheese. Top with half of the pears and half of the dried cherries or cranberries. Top with another 1/4 of the cheddar cheese. Top with another tortilla, cream cheese side-down. Press down with spatula to seal.
  3. Once cheese is melted and tortilla is brown, carefully flip. When other tortilla is browned, remove from pan and slice into quarters. Repeat for second quesadilla.

    These bfast quesadillas look fantastic, and your idea of cheddar, apple, and raisin quesadillas sounds delicious as well.

  2. Did you try taking an antihistamine? If I have a runny nose, it works for me. If you’re just generally blah with sinus gunk, headaches etc. My Grandma would recommended a hot humidifier, and a neti pot

  3. Yum!! Never tried the “pear and cheddar” combo- but it works with apples, so why not? The photos are so pretty, too!
    Was it very filling? I think I’d probably be hungry in about 2 hours- guess I’d have to pair this with eggs or something. ๐Ÿ™‚

  4. I made it! And it was delicious. I used what I had on hand – a green apple instead of a pear, a blob of cranberry preserves instead of dried fruit, a bit of agave in place of the honey – and it was absolutely divine. Thanks for the inspiration. Hope you feel better soon!

  5. I love the apples (or pears) + cheese combo! I love to make fancy grilled cheese sandwiches with gouda, super sharp cheddar, and apples.

    Also, I hope you start feeling better soon! I just pulled through a nasty cold/ flu. I’m finally feeling like a human being for the first time in 2012.

  8. I have a cold now too, which sucks. I saw the doctor today and he said I should be better by Friday. I told him I damn well better be since I’m running the Disney marathon on Sunday!

    That quesadilla sounds SO good. What a great idea!
