Oh August, you and your oppressive heat are driving me to make salsa.
Not sure why. But spicy food is just so awesome in the heat. I heard something once that the reason foods from hottest climates are so spicy is to off-put the weather. Relatively, 110° doesn’t feel so hot when you have a jalapeno seed burning your tongue. It reminds of that whole, “My head hurts.” “Well, slam your finger in the door and your head won’t hurt anymore.”
Neither my husband nor I are huge fans of spicy foods. We like a little kick, but we are true Yankees and our palettes just can’t handle the heat. Tonight’s dinner was the perfect amount of spice.
These were supposed to be chicken and guacamole toastadas, but I went a little rogue on this one and they ended up being soft tacos, not really following any of the recipe ingredients.
But I did toast the tortillas. So that makes them sorta tostadas (which literally means “toasted”). But they weren’t crispy or crunchy. So the tacostada was born.
Chicken Guacamole Tacostadas
6 small whole grain tortillas (I toasted these on a hot griddle, not necessary, but added a nice smoky flavor)
Shredded cheese (cheddar, monterrey jack, whatev)
Plain Greek yogurt (or sour cream)
Chicken
2 medium chicken breasts
2 T. olive oil
2 T. lime juice
1 t. cumin
1 t. Montreal Steak Seasoning (one of my favorites!)
Season chicken with all ingredients. Grill until finished. Let cool and shred.
Guacamole:
2 avocados, peeled and mashed
1/2 medium onion, diced
2 plum tomatoes, diced
1/4 c. cilantro, diced
1 t. minced garlic
1 T. lime juice
Salt and pepper
Mix all ingredients. Taste and season.
Salsa:
1/2 medium onion, diced
3 plum tomatoes, diced
1/4 c. cilantro, diced
1 jalapeno, diced (we removed all seeds, but add as many as your tastes dictate)
1 t. minced garlic
1 T. lime juice
Salt and pepper
Mix all ingredients. Taste and season.
To assemble: spread guacamole on tortillas, top with shredded chicken, salsa, cheese and yogurt. Eat with knife and fork. Or if you are like me and can’t be bothered with utensils, roll up and nom.
These were totally rockin’!
And I love substituting Greek yogurt for sour cream. Works so well!
I’ve been struggling getting to the gym. It is so ridiculously hot that the thought of making myself warmer is just about unbearable. Sigh. So ready for Fall!
